A Crispy Wing

I was at The Library the other night, and for the first time in a while I didn’t order the wings. This is significant because The Library has some of the best Buffalo wing sauce around and they serve it on big, meaty wings. But I honestly can’t remember the last time they came out nice and crispy. I’ve tried ordering them “extra crispy” and “well done,” but nothing does the trick. No matter how good your sauce is, undercooked wings with soggy skin are not appetizing. I cannot stress enough the importance of a crispy wing. That is all.
